Papas Chorreadas, Cheese And Tomato Sauce Smothered Potatoes From Colombia: Delicious Recipes From Around The World!

Recipes help us travel without leaving home and today we have landed in Colombia for a taste of Papas Chorreadas. A delicious potato recipe drizzled with cheese and tomato sauce.

 

Colombia is a South American country bordering Panama, Venezuela, Brazil, Ecuador, and Peru. It is the second most diverse country in the world. Colombia also has the largest bird, butterfly, and orchid species in addition to its 7,000 species of beetles.

 

Papas Chorreadas 

This dish, typical of the Andean area, is a popular side plate in Colombia. The simple-boiled red potatoes are covered with a rich cheesy sauce, tomatoes, and scallions. Chorreadas is derived from the Spanish verb chorrear, which means “to pour” or “to flow.”

Ingredients

6 medium red potatoes

1tbps olive oil

½ scallion, cut into juliette

1 garlic clove

200g chopped tomatoes

½ tsp cumin

240ml heavy cream

100g grated cheese

Salt and pepper to taste

 

Method

  • Partially peel the potatoes, place them in a pot with enough salted water to cover them, and bring to a boil. Boil for 40-45 minutes on medium heat.
  • In the meanwhile, heat the olive oil in a large pan. Add the scallion and garlic, then cook until soft (about 1-2 minutes).
  • Add the chopped tomatoes and cumin to the pan. Cook for another 5-8 minutes.
  • Add the cream and cheese; season to taste. Cook the sauce until it thickens (about 5 minutes).
  • Drain the potatoes, place them on a serving dish, and cover with the sauce.

2-4-year-old

  • Measure the ingredients. If you are using a scale, make sure that you write the numbers in a large, clear font for them to copy.
  • Cover the potatoes with sauce (under adult supervision).

 

5-7-year-old

  • Chop the ingredients (under adult supervision).

  • Add the scallion and garlic to the pan (under adult supervision).
  • Add chopped tomatoes, cumin, cream, and cheese to the pan (under adult supervision).
  • Cover potatoes with sauce (under adult supervision).

 

7-year-old plus
